Pumpkin Granola Bars

These granola bars are one of my snack staples.  I have always loved granola bars, however, most of them have a lot of processed sugar and artificial ingredients in them.  I got this recipe from my Beachbody Coach Melanie Mitro, and I just changed a few things!  I LOVE these things!

Ingredients
3 1/4 cups of old fashioned rolled oats
1 tsp pumpkin pie spice
1/4 tsp cinnamon
1/2 tsp salt
1/2 cup pumpkin pie puree (make sure the only ingredient is pumpkin)
1/2 cup unsweetened applesauce
1/3 cup real maple syrup
1/2 cup dark chocolate - the darker the better for you
2/3 cup walnuts
1 tsp vanilla extract

Feel free to substitute honey for the maple syrup, almonds or another type of nut or seeds for the walnuts, or even almond extract would probably be good!

Directions
Preheat oven to 350. Spray an 8x8 or 9x9 baking pan. Put all of the dry ingredients into a bowl and mix to combine.  Put all of the wet ingredients in a separate bowl and whisk.  Dump the wet into the dry and mix together.  Press into the bottom of a 8x8 or 9x9 pan.  Bake 25-30 minutes or until top turns a light golden brown.  Let them cool, cut into 10-12 squares, and package them separately into tupperware or baggies and you have your snacks ready to go!
