Most of the United States eats way too much meat. I believe the statistic is 10 billion animals are killed each year so we can eat them. And livestock produce more greenhouse gas than all transportation put together (cars, buses, trains, etc). So it wouldn't kill us, me included, to incorporate more vegetarian meals into our meal planning. I love this black bean burger recipe. It's easy and it tastes good! This one is from the pampered chef's It's Good For You cookbook, and it's the only one I use, with a few little tweaks. Beans are high in protein, fat free and cholesterol free. They are high in folic acid, potassium and soluble fiber so are very healthy for you.
Ingredients:
1 can black beans, drained rinsed and mashed
1/3 cup chopped onion
1/3 cup corn
1/4 cup salsa
1-2 cloves of galic, minced or pressed
2 tbsp chopped cilantro
1/2 tsp salt
1/4 tsp black pepper
1/4-1/2 tsp cumin
1/2 cup unseasoned wheat bread crumbs
2 egg whites
Optional Toppings: plain greek yogurt, salsa, lettuce, cilantro, avocado
Whole grain or whole wheat hamburger buns
Directions:
Mash beans in a bowl. Chop up onion and to the beans, add onion, corn, salsa, garlic, cilantro and seasonings. Mix well. Add bread crumbs and egg whites to bean mixture. Mix well. Form bean mixture into 4 patties. Heat a skillet and lightly spray the pan. Cook about 8 minutes or until lightly browned. Place burgers on buns and serve!
