Chicken "Fried" Rice

I LOVE this recipe!!!  It tastes great and it's packed with a lot of flavor, protein and veggies.  Easy to make and fairly quick to prepare, this can be one of your go to's any night of the week!!

Ingredients
Brown rice, quinoa or if you must, white rice, prepared.  I usually make one cup dry
1 cup of frozen peas
3 eggs
1 onion, diced
1 red bell pepper, diced
2 carrots, peeled and chopped
2-3 scallions, chopped
Tamari or soy sauce
Sesame oil
Olive oil
2-3 chicken breasts (you can leave this out, or use tofu as well)

Directions
Cook rice/quinoa according to package.
In a (I use non stick so I can make the eggs in this pan as well) pan on medium heat, add sesame oil with a little olive oil as well.  Salt and pepper the chicken, then cook chicken until cooked through and no longer pink.  Set aside. Once cooled, chop up into chunks.
In a large pan, add sesame oil, onion, bell pepper, and carrots.  Add salt and pepper.  Cook until your preferred softness for stir fry then add the peas and heat through.
Scramble eggs, and cook in non stick pan  until done.
Combine veggies, chicken and eggs in a pan.  Serve over top rice.  To the top, add a little tamari or soy sauce, a dash of sesame oil and some scallions.
