Apple Flax Muffins

I made these and ate three right after they got done.......  I need to work on my, just because it's healthy doesn't mean you can eat extra, will power:)

Ingredients:
1.25 cups flaxseed meal
2 tsp baking powder
1 tbsp cinnamon
1 tsp nutmeg
1/2 tsp sea salt
2/3 cup demerara sugar, coconut sugar, honey, maple syrup or stevia equal to 2/3 cup of sugar
4 large organic eggs, beaten
1/4 cup coconut oil
1 tbsp pure vanilla
1/2 cup water
1 large granny smith apple, chopped finely or grated
1/2 cup chopped nuts such as walnuts, pecans or almonds - optional

Directions:
Preheat oven to 350.  Spray muffin tin or line with baking cups.  Mix the dry ingredients together in a bowl with a whisk.  Mix the wet ingredients in a separate bowl.  Add the wet to the dry and combine.  Let the batter stand 10 minutes.  Spoon batter into muffin tins and bake for about 18 minutes.  Makes 12 muffins.  You can also add berries to the batter.
